After many years of operating the winery according to the guidelines of controlled environmentally friendly viticulture, the Hemers decided in 2004 to take the last step and consistently focus on organic viticulture. Low pruning, perfect soil cultivation, optimal nutrient supply to the vines and careful use of pesticides have always been important to the Hemer family. Now this knowledge and action is reinforced by the cultivation of their vineyards according to the ecological guidelines of the ECOVIN association. The gentle treatment of nature also continues in the cellar. By optimising the processing procedures, the grapes reach the modern grape press, with which they are gently pressed. This gentle treatment makes it possible to preserve the natural aromas and fruit nuances to a large extent. By means of a controlled and restrained fermentation, these natural aromas are integrated into the wines and thus reflect the uniqueness of each wine in the glass. By striving for better and better wines, the vinification of the high-quality wines takes longer and longer. The ripening process of some white wines lasts until the spring of the following year. Some of the top red wines need time until early summer. A long ageing on the fine lees characterises the wines of the Hemer family with an elegant suppleness and harmony.
